Scroll down to the bottom of MO2, right click on overwrite -> All Mods and create separator above

Type 1.3 ALTERNATE START and click OK

Select LOOT from the right combobox and click on Run button (Always run it from Mod Organizer)

Click on the Sort Plugins button

When done click on Apply Sorted Load Order

If there is no load order change to make, you will get this screen

You can close LOOT

DON'T TEST YOUR GAME until you completed section 2.1 HUDS with Skyrim Unbound Mod Installed.

Using this mod as alternate start, you will start in a room.

At first you will not be able to move, this is normal

Hit ESC on your keyboard, go to MCM configuration, select Skyrim Unbound (the first one).

You can then configure a lot of things like being the dragonborn or not, your starting location, your gear, the season,...

When done click on Let's Go.

Configure your character, when done click on Stay Here and wait until all mods initialization messages (top left corner) are gone

Hit Enter to start

To start the main quest kill your first dragon (if you selected to be the dragonborn) and you will be summoned by the Graybeards.
